This versatile salad is full of protein and so many other nutrients. Eat it alone as a meal with a nice piece of bread or as a side to almost any kind of meat or fish. Enjoy!
Ingredients
- 16 oz cooked lentils (small french lentils work well)
- 3 Persian cucumbers OR 1/2 English cucumber
- 1/4 cup red onion chopped
- 1 cup cherry tomatoes halved
- 1-2 cloves of pressed garlic
- 1 cup chopped parsley
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 3 tbsp apple cider vinegar
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- salt and pepper to taste
Steps
- Boil lentils in water until just tender
- Mix all ingredients together
- Chill in refrigerator before serving
