Lentil Salad (Vegan)

This versatile salad is full of protein and so many other nutrients. Eat it alone as a meal with a nice piece of bread or as a side to almost any kind of meat or fish. Enjoy!

Ingredients

  • 16 oz cooked lentils (small french lentils work well)
  • 3 Persian cucumbers OR 1/2 English cucumber
  • 1/4 cup red onion chopped
  • 1 cup cherry tomatoes halved
  • 1-2 cloves of pressed garlic
  • 1 cup chopped parsley
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 3 tbsp apple cider vinegar
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • salt and pepper to taste

Steps

  1. Boil lentils in water until just tender
  2. Mix all ingredients together
  3. Chill in refrigerator before serving
