Flourless Almond Chocolate Chip Delights

I created this recipe for my parents when we discovered that their blood sugar was elevated. I didn’t want them to miss out on sweets or desserts, so I created something that tasted delicious, but left out all the bad ingredients – usually found in cookies.

Ingredients ~ 2 dozen cookies

  • 2 cups almond flour
  • 1/3 cup coconut flakes
  • 1/3 cup ground flax seeds
  • 1/3 cup hemp seeds
  • 1 tsp baking soda
  • 1/2 tsp kosher sea salt
  • 1 stick of butter OR 1/4 cup olive oil
  • 1 large egg
  • 2 large egg whites
  • 1 tsp pure vanilla extract
  • 1/2 cup sugar
  • 3/4 cup dark chocolate chips

Steps

  1. Preheat oven to 375° F
  2. Line 2 baking sheets with parchment paper
  3. Combine the dry ingredients & set aside
  4. Combine the wet ingredients
  5. Pour wet ingredients into bowl with dry ingredients and mix well
  6. Spoon tbsp sized doughs onto lined baking sheets
  7. Bake for 15 minutes
  8. Take out of oven and let cool on baking racks & enjoy!
