I created this recipe for my parents when we discovered that their blood sugar was elevated. I didn’t want them to miss out on sweets or desserts, so I created something that tasted delicious, but left out all the bad ingredients – usually found in cookies.
Ingredients ~ 2 dozen cookies
- 2 cups almond flour
- 1/3 cup coconut flakes
- 1/3 cup ground flax seeds
- 1/3 cup hemp seeds
- 1 tsp baking soda
- 1/2 tsp kosher sea salt
- 1 stick of butter OR 1/4 cup olive oil
- 1 large egg
- 2 large egg whites
- 1 tsp pure vanilla extract
- 1/2 cup sugar
- 3/4 cup dark chocolate chips
Steps
- Preheat oven to 375° F
- Line 2 baking sheets with parchment paper
- Combine the dry ingredients & set aside
- Combine the wet ingredients
- Pour wet ingredients into bowl with dry ingredients and mix well
- Spoon tbsp sized doughs onto lined baking sheets
- Bake for 15 minutes
- Take out of oven and let cool on baking racks & enjoy!
